Thai Sweet Chili Salmon

Broiling salmon is quickly becoming one of my favorite ways of cooking it. Who knew placing salmon under the broiler would produce perfectly cooked salmon in minutes. In addition, it makes the skin unbelievably charred and the inside moist and tender

  • 4-6 6 oz salmon fillets with or without skin
  • 1/4 cup Asian sweet chili sauce
  • 3 tablespoons soy sauce divided
  • 2 garlic cloves minced

  1. Whisk chili sauce, soy sauce, and garlic in a large bowl or shake in a ziplock bag.
  2. Place salmon in the marinade and cover completely with the marinade. Cover with plastic wrap or seal bag if using a ziplock bag. Place in the fridge to marinate for 30 minutes to 1 hour.
  3. Preheat broiler for 5 minutes. Line a baking sheet with foil or parchment paper and spray with cooking spray. Broil salmon without turning until browned in spots and almost opaque in center, 7 to 10 minutes. Serve with rice or steam veggies. Enjoy!
