Dominican Stewed Chicken


  • 1/2 kg any part of chicken meat, clean and cut into pieces

  • 4 cloves of finely chopped garlic
  • 3 tablespoons olives, I use black olives
  • 5 tablespoons pureed tomatoes
  • 2 teaspoons of oregano
  • 1 tablespoon of olive oil, if not, you can replace it with vegetable oil
  • 1/2 lemon, take the water
  • 3 tsp sugar
  • flavoring and salt to taste
  • 3 tablespoons of vegetable oil for cooking


  1.  In a large container, add chicken, onion, paprika, garlic, olives, pure tomatoes, oregano, olive oil / vegetable oil, flavoring and salt to taste, stir well and leave for 30 minutes or overnight. (if you want to step on the gas you can leave it for a few minutes).
  2. In a pan / pan can also, heat the vegetable oil and sprinkle sugar, cook until the sugar becomes caramel (this is intended so that the cooked meat will have a distinctive brown skin color and make it taste good in the chicken meat).
  3. After the sugar becomes caramel, just take the chicken meat (other marinade ingredients set aside for a while) and fry it on top of the caramel until the meat is cooked on both sides and brownish.
  4. Then add the remaining marinade with lemon juice, stir well and cook until the chicken meat and vegetable marinade are completely cooked. Remove and serve with sliced ​​parsley leaves.
